Cheese and Chive Dip

This is a simple, creamy and tasty dip, certain to whet the

appetite. Serve with plenty of cucumber, celery and carrot

batons, or simply smeared upon crusty bread.

1 small garlic clove, crushed (optional)

4 oz / 100 g fromage frais

4 oz / 100 g blue cheese (e.g. Dolcelatte)

juice of 1 lemon

2 tablespoons chives, chopped

1 teaspoon chives, chopped, to serve

freshly ground black pepper

In a bowl, beat together the cheese, fromage frais and, if

you want an extra tang, the garlic. Add the lemon juice,

chives and a liberal sprinkling of black pepper. Spoon the

dip out into a serving bowl and serve with a selection of

vegetable batons – crunchy celery and cooling cucumber

work best.
