Salmon Fillets


Serves 4
Cooking time: 10-12 minutes
Salmon needs little augmentation as it is fresh tasting and
beautifully textured in itself – but if you’re looking for a
little extra try it with herbs or ginger, honey and lime.
Otherwise these parcels are simplicity itself.
4 boneless, skinless salmon fillets
2 tablespoons lemon juice
Lightly oil 4 squares of kitchen foil and place a salmon
fillet on each. Brush lightly with lemon juice and oil and
wrap the salmon in the foil, leaving space for a little air
inside each foil parcel. Place on the grill over hot coals or
embers for 10-12 minutes, turning once halfway through
the cooking time. You’ll know they’re ready when white
juice begins to leak from the flesh.
