Cheddar Chops

Serves 4
Cooking time: 17-22 minutes
A simple spread for lamb and pork chops.
4 lamb or pork chops
6 oz / 150 g Cheddar cheese
breadcrumbs made from 2 slices of good crustless white bread
1 tablespoon olive oil
salt and freshly ground black pepper
Grate the Cheddar into a bowl, add the mustard, breadcrumbs and oil, season and mix well. Smear the mixture onto both sides of pork or lamb chops that have been grilled for about 16-20 minutes. Return the chops to the grill, cooking for a further 1-2 minutes on each side, or until they are a golden, crispy brown.
