Philippine Pork


Serves 4
Cooking time: 16-20 minutes
This Philippine marinade is really intended for poultry, but
its sweet and spicy orange tang gives pork that little bit of
extra zing.
4 large pork chops
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
2 tablespoons orange juice
1 tablespoon rock salt
2 large garlic cloves, crushed
1 small red chilli, seeded and finely chopped
freshly ground black pepper
Combine the Worcestershire sauce, sugar, orange juice, soy, salt, garlic and chilli and mix well. Pour the mixture
over the pork chops in a shallow dish. Cover and chill for at least 4 hours (but I’d recommend leaving it overnight if
possible). To cook, place the chops on a grill above hot coals or embers for 8-10 minutes each side, basting every
now and then with the remaining sauce.
