Another cheesy surprise hidden in the middle of these supersmooth
1 lb / 500 g lean beef mince
1 medium free range egg
100 ml milk
1 tablespoon fresh basil, chopped
1 tablespoon fresh oregano, chopped
Combine the mince, breadcrumbs, egg, milk and herbs and mix well but not to a pulp, then form four evenly sized balls from the mixture. Cut the cheese into even cubes and press each cube into the heart of the ball, as you would with the Bifteki (above). Fold the meat over and enclose the cheese. Press the balls down into burger shapes, brush them with oil and grill for 6-8 minutes on each side.
