thin burgers. This barbecue variation has a Feta surprise
in the middle.
1 lb / 500 g lean beef mince
8 oz / 225 g Feta cheese
salt and freshly ground black pepper
Mix the beef and seasoning as you would for the Basic Burger. Form it into four evenly sized balls. Now chop the Feta cheese into four even cubes and push them into the top of each ball, pressing them down until they are about in the centre. Fold the meat over to enclose the cheese. Flatten the balls down into burger shapes, brush them lightly with oil and grill over hot coals for 6-8 minutes on each side.
