Thai Burgers

Serves 4

Cooking time: 10-12 minutes
With fragrant lemongrass for a taste of Thailand.
1 lb / 500 g lean beef mince
1 shallot or small onion, finely chopped
1 tablespoon lemongrass, finely chopped
1 red chilli, seeded and finely chopped
4 tablespoons unsalted peanuts, crushed
1 tablespoon olive oil
salt and freshly ground black pepper
Mix the shallot, lemongrass, chilli, peanuts and oil together in a bowl (or briefly whizz them in a food processor until you have a rough and lumpy consistency). Add the beef mince, season, and mix until the peanut and spice are evenly distributed throughout the meat. Form them into 4 evenly sized balls, squish the balls down to form burgers, oil them lightly and cook over hot coals for 5-6 minutes each side.
